1 cup Apple besan (gram flour/chickpea flour)
1 small onion, chopped
1 small tomato, chopped
1 green chilli, chopped
1 tablespoon coriander leaves
1/2 teaspoon haldi (turmeric powder)
1/2 teaspoon red chilli powder
1/2 teaspoon ajwain
1/2 teaspoon jeera
Salt to taste

1. In a mixing bowl, add 1 cup of Apple besan. Add water and mix well.
2. Add the chopped onion, tomato, green chilli, coriander leaves, turmeric powder, red chilli powder, ajwain, jeera, and salt. Mix it well to make the batter. Ensure the consistency is not too thick or too thin.
3. Heat up a non-stick pan, add a few drops of oil and spread it with a cloth or brush.
4. Take a ladleful of besan batter and pour it on the pan, and gently spread it in a circular motion to make a dosa-like structure.
5. Let the chilla cook for a minute.
6. Drizzle a few drops of oil around the edges, and flip the chilla.
7. Let it cook for 2-3 minutes.

Apple Besan Bhajiya (Potato & Onion)

1 cup Apple Besan
1/2 teaspoon haldi (turmeric powder)
1/2 teaspoon red chilli powder
1/2 teaspoon garam masala (optional)
1/2 teaspoon ajwain
Salt to taste
2 potatoes, sliced
1 onion, sliced
Oil (for deep frying)

1. In a bowl, add Apple besan, haldi, red chilli powder, salt, ajwain, garam masala and sliced vegetables. Add water and stir continuously to make a consistent batter.
2. In a pan, add oil and let it heat up.
3. Drop the besan-coated potato and onion pieces in oil and deep fry.
4. Fry until bhajiyas are golden brown and look crispy.
5. Remove the bhajiyas with a slotted spoon to remove oil.

Apple Besan Kadhi

1 cup dahi
2 tablespoons Apple Besan
4 cups water
1/2 teaspoon haldi (turmeric powder)
1/2 teaspoon red chilli powder
Salt to taste

For the Tadka:

2 tablespoons ghee
1 teaspoon mustard seeds
1 teaspoon jeera
A pinch of hing
8-10 curry leaves

1. In a bowl, add dahi and Apple Besan and mix well to avoid lumps.
2. Keep adding water in the mixture to get a smooth consistency. Add haldi, red chilli powder and salt. Mix well.
3. In a pan, add ghee, mustard seeds, jeera and let it splutter. Add hing and curry leaves.
4. Slowly pour the dahi and besan mixture into the pot and stir continuously to avoid lumps.
5. Let the mixture boil and then simmer for about 20-30 minutes, until the kadhi thickens.

1. In a small pan, heat ghee. Add mustard seeds, jeera and a pinch of hing, and let it sputter for 10-15 seconds.
2. Pour this tadka over the kadhi.
