1. Apple Besan Shakshouka

Shakshuka is an authentic North African recipe usually made with eggs. But at Apple Foods Kitchen, we’re bringing you a completely eggless version – just as delicious and wholesome.

Ingredients

– Apple Besan – 2 tbsp
– Crumbled paneer – ¼ cup
– Curd – ¼ cup
– Turmeric powder – ¼ tsp
– Water – 2 tbsp
– Oil – 2 tbsp
– Cumin seeds – 1 tsp
– Sliced garlic – 1 tsp
– Apple Himalayan Rock Salt – as per taste
– Finely chopped onion – ¼ cup
– Finely chopped tomatoes – 2
– Finely chopped green capsicum – as required
– Finely chopped yellow capsicum – as required
– Chilli flakes – ½ tsp
– Oregano – 1 tsp
– Crushed black pepper – ½ tsp
– Tomato purée (from 3 tomatoes)
– Water – as required
– Paneer rings – as required
– Chopped green chillies – as required
– Chopped coriander – as required
– Bread for serving

4-Step Method

Blend Apple Besan, crumbled paneer, curd, turmeric, Apple Rock Salt, and water to make a thick batter.
Heat oil in a pan and add cumin, sliced garlic, onions, tomatoes, chilli flakes, oregano, black pepper, red chilli powder (optional), Apple Himalayan Rock Salt, tomato purée and a little water. Sauté well.
Make small wells in the gravy and place paneer rings. Fill each ring with the besan-paneer batter. Cover and cook till it sets.

Garnish with green chillies and fresh coriander. Serve hot with bread and enjoy!

2. Apple Rawa Burger

Burger might be an American staple, but in India we love giving it a healthy twist.
So Apple Foods Kitchen created a burger made using Apple Rawa — light, nutritious and tasty.

Ingredients

– For the buns
– Apple Rawa – 1 cup
– Water – as required
– Milk – 3-4 tbsp
– Maida – ¼ cup
– Oil – 1 tbsp
– Apple Himalayan Rock Salt – as required

For the stuffing

– Oil – 2 tbsp
– Jeera – 1 tsp
– Mustard seeds – 1 tsp
– Chopped onion – ½ cup
– Blanched green peas – ¼ cup
– Dhaniya powder – 1½ tsp
– Turmeric – a pinch
– Red chilli powder – 1½ tsp
– Boiled & mashed potatoes – 100 g
– Apple Himalayan Rock Salt – as required
– Chopped coriander – 1 tsp
– Oil – 1 tsp (for shallow frying)

4-Step Method

Roast Apple Rawa, then add water, milk, Apple Maida and Apple Himalayan Rock Salt. Cook until it forms a soft, dough-like consistency.

For the stuffing, heat oil and add jeera, mustard seeds, onions, peas, spices, potatoes, Apple Himalayan Rock Salt and coriander. Mix well and let it cool. Shape into tikkis.
Take one Apple Rawa base, place the potato tikki, and cover with another base.
Shallow fry on both sides until golden. Serve hot.

3. Apple Chakki Atta Ravioli

Ravioli is one of Italy’s most loved dishes — and Indians love it too.
But what if we make it healthier with Apple Chakki Atta?
Here’s our desi, wholesome take on Italian ravioli.

Ingredients

– For the dough
– Apple Chakki Atta – 1 cup
– Oil – 1 tsp
– Water – as required
– For the stuffing
– Finely chopped onion – ½ tsp
– Finely chopped garlic – ½ tsp
– Finely chopped carrot – ½ cup
– Yellow bell pepper – 2 tbsp
– Red bell pepper – 2 tbsp
– Green capsicum – 2 tbsp
– Processed cheese – 2 tbsp
– Apple Himalayan Rock Salt – as required
For the sauce
– Oil – 1 tbsp
– Butter – 2 tbsp
– Finely chopped onion – 1 tbsp
– Finely chopped garlic – 1 tsp
– Pre-cooked vegetables (carrot + bell peppers) – as required
– Apple Maida – 1 tsp
– Water – 1 cup
– Fresh cream – 2 tbsp
– Black pepper powder – 1 tsp
– Apple Himalayan Rock Salt – as required
– Coriander – as required
– Olives – 2 (optional)
Method
– Knead a soft dough using Apple Chakki Atta, oil and water.
– For the stuffing, sauté onion, garlic, carrot, and all three bell peppers. Add cheese and Apple Himalayan Rock Salt. Mix well and cook.
– Roll out small roti-like sheets from the dough. Cut them into equal squares. Place stuffing in the centre of one sheet and seal with another using water.
– Boil the ravioli in salted water, then shallow fry for extra flavour.

For the sauce, heat oil and butter. Add onions, vegetables, Apple Maida, cream, pepper, Apple Himalayan Rock Salt and water. Cook until thick. Add the ravioli, mix gently and serve hot.
