Khichu

This is a typical lazy, not-in-a-cooking-mood type of dish in Gujarat. It can be prepared in 10 minutes with basic ingredients like salt, jeera, green chillies, and rice flour.

But across India or outside India, it is famous for its comfort. It is celebrated on rainy days. It is also a healthy option for diet-conscious people due to being gluten-free and oil-free.

Dal Dhokli

In Gujarat, Dal Dhokli is deeply comforting food, usually made from leftover toor dal and Apple Chakki Fresh Atta. Or when someone is too confused to decide between roti sabji and dal chawal, Dal Dhokli serves as an awesome middle ground. Originating from Kutch, Gujarat, Dabeli is a street-side snack. It is affordable, quick to make, and gives spicy flavours of potatoes, sev, peanuts, all stuffed into a bun. It’s a very convenient, spicy, and easy option for Gujaratis.

But in Mumbai, it has started competing with Vada Pav. Abroad, it is known as a spicy slider or street-style burger. Dabeli has grown even more famous in food trucks in London and Toronto for its bold flavours and variations of tikhi-mithi chutneys.

Sev Usal

When Gujaratis don’t feel like having a full meal but want something light yet fulfilling, Sev Usal is the go-to dish. It’s a common evening snack to satisfy light hunger before dinner. Commonly found in Vadodara and Nadiad, Sev Usal is a classic mix of white peas curry, topped with chopped onions, chutneys, and sev.

But for Instagram chefs, it works as a base for loaded bowls and experimental platters. In Maharashtra, it is served with pav or as sev ragda variants.

So, these 5 dishes are deeply rooted in comfort and routine, but they hold a strong identity on a global platform, with star status.
